Motivation

There's nothing so motivating as trying on clothes.

I have been drifting in the land of apathy. It has been a good two months since I've maintained an exercise routine or a sense of control over my appetite. In fact, I've been the complete opposite and my body is paying for it.

Though I have felt like exercising, at this point the hurdle is the fact that I am out of the habit. I really like getting up in the morning and showering first thing so that I am ready to walk out the door with the boys. I do not want to get up early and exercise though.

I've slowly been pulling things out of our storage unit and the most recent 'treasure' is a tote of clothes. I pulled out a few to try on the other night and discovered that either the clothes were too big or too small. How frustrating. Interestingly, I immediately found my motivation for returning to activity! I want to fit into something!!

Today I found that my craving for junk food had been curbed and I even had the desire to go to the park with the boys and chase them around the playground. The New Year has always been a good time for me to re-boot my health and I think I am mentally ready to do it again this year. Now to decide how and what I'm going to do.....

Weigh-in

It's been a long time since I've done a weigh-in since our bathroom scale quit working at the same time our Wii decided it didn't want to play anymore. The Wii must have gotten over it though b/c the remotes are working again (whew). So, according to the Wii I am 181.7. For not having really exercised in a month, I think that is pretty darn awesome. My clothes say it is more like 183-184 but I like the scales' reading ;)

And since I had the Wii out anyway, I decide to actually do some exercise! woohoo!! I racked up 32 minutes of Wii exercise playing the balance and aerobic games. I forgot how much fun they are - especially the Wii step. I think I could manage to do that regularly.....shhh Don't tell the boys... I also ordered Just Dance 2014 for Christmas! 

Even if I am no longer working on my 5K goals, I still need to stay active!! I have hopped on the treadmill a couple of times and done one of the timed programs. Anyway, this was just meant as a quickie. I'm trying to be productive today but I keep getting sucked into computer land.

Surprise

I don't like to cry though I can be moved to tears easily. Funerals generally don't produce much of a response. But tonight, when I received word that one of my dearest friends is moving from San Antonio this week, tears came quickly. Though I knew that moving was in their future and that this summer was probably their last in TX, it is hard to see it come to fruition. There will be a huge gaping whole when we return for visits. She was my rock and advocate during that hard last year when we left TX. Her kids are my kids best friends. She is my soul sister.

 But maybe it will be motivation for visiting UT again. It's been awhile and Mark and his family moved there this last summer too.

Look Again

Today I was looking for something that had at one point been on my dresser, but when I wanted it today it wasn't there. After looking in a few spots around the house, I asked the boys if they had seen it. Aaron promptly asked me where I thought it was and told me to look again. "Mom," he said, "you always tell us to look again so you need to do that too." He led me upstairs to the dresser and told me to look all around and under things. He even helped and gave suggestions along the way. Finally I moved to Matthew's dresser and found it under a box. Aaron proudly told me, "See! You always have to just look again."

I was supposed to do my 20 min run on Saturday but I ended up being so wiped out that I slept most of the day. I finally felt better at 11 pm but at that point it was too late to run. Today I debated doing the 20 min or moving on to the next week. I finally decided to do the 20 min and then Matthew decided he'd run outside with me. He is so prone to shin splints that he is really wary of running on concrete, but for whatever reason, he decided he would try it. However, with his input we decided to do the walk/run intervals instead. It's been awhile since he's run so that would help him ease back into running. As suspected, he lapped me. I felt like I was going really slowly, but looking at the final product I am still doing better than before. I had to go to week 7 to find the same distance covered. So overall I am happy with my progress, I just need to stay motivated to get out the door and do it.

Monday I ran around the neighborhood. I have pretty much maintained my distance/speed - 2.25 mi in 31 minutes (with warm-up and cool down).

Tues I did my SELF video for the first time in a couple of weeks which felt good.

Wed I was a bum. Jared pulled his first 'all-nighter' (went to bed at midnight and was up again at 5) so we were all really tired. Plus we had to chase the bus to the next stop for him to catch it. I was actually kind of impressed at how easy that was and how good it felt... The weather was just right for running, but in the end I curled up on the couch and fell asleep. It's amazing how much better I felt after a nap though at that point I only had 2 hours til the boys got home so I took care of some projects instead of exercising.

Thurs the brain fog wanted me to give in to being a bum, but I forced myself to get dressed in my exercise clothes and then half the battle had already been won. I did opt to use the treadmill though it was great running weather once again. It's silly, but the landscapers were here and I didn't want them to see me run (though they probably saw me on the treadmill anyway so it wouldn't make a lot of difference). I almost hit the pavement as soon as my warm-up was over because I wanted to watch the houses pass as I move, but didn't. This interval was 8 min running with a 5 min walk in between. The first 8 minutes went pretty quickly and I even turned up my speed to hit 6.0 mph though I quickly dropped it back down. Ideally I would have followed the same incremental reduction as I did increase, but oh well. The second 8 minutes weren't quite as easy and I ended up spending most of it at a slower pace (4.5) though I did work up to 5.5 and back down.

I was pretty pleased with how 'easy' it was. I did my warm-up all the way up to 4.0 mph and then started my jog at 4.5 though I found 4.8 - 5.0 my comfortable spot. Kind of cool :)

Last night was a rough night and I am choosing to be a bum again. My legs are actually sore and I am not feeling great either. Tomorrow I will need to run though. It is the first 20 minutes run of the program. I am kind of looking forward to it and comparing it to my first 20 minute run where I was dying!! Part of the fun of this journey is to see the progress b/c it is tangible! :)

I'd Vote for You

Saturday night was our ward Trunk r Treat and chili cook off. I made white chicken chili for the competition. I don't think anyone touched it - except Matthew. I had a spoonful of it just to taste. Yikes. Serious lacking in the sodium department!! I was supposed to use chicken broth but just used water and didn't compensate in the flavoring. I did find a ramen chicken flavoring packet in the cupboard but opted not to add it. I should have. Oh well. Needless to say, at the end of the night there were plenty of leftovers for us tonight.

After church today I added the ramen packet and warmed it up. Oh wowsers! All of a sudden the chili was amazing. I could taste the flavors of the spices I had put it in yesterday. Turns out it really needed a day to soak up the flavor. I might have had a chance at winning. Jared was surprised to discover that I had taken the chili last night. Seems he knew last night at some point though bc I think he made this same comment then, but he told me that he wished he'd known I had a chili in the contest. He would have voted for me :) He was surprised that I didn't win.

Such a sweet boy :)

Last night when we were talking about the breads and chilies we each picked, he told me that his cornbread was so good and that it tasted really sweet. I thought he'd gotten the same one as Aaron, but later when we went back up the food table he pointed to the pan of cornbread that I had brought :)

The mornings have greeted us with frosty grass and iced windows since Thursday. I turned the heat on then, but even still I could not stay feeling warm as the day progressed and the room temp met the heater's standards. Apparently the heater wants to run the same way the a/c did - all night and not during the day. I even felt cold air through the vents at one point through the day!! No wonder I get cold :/ 

Today was no different outside - frosty grass, iced windows, but on the inside -  I was warm. And feeling awake. It has been a tired kind of week, but today I felt more energetic and WANTED to go run and did :) I was a little slower than Monday, but not by much (maybe 5-10 sec delay).

Mid-week running blues

It is amazing how the middle of the week seems to be such a downer for my exercise lately - especially after having such great runs on Mondays. hmm

Yesterday the boys were out of school so I opted not to exercise though I really could have - even if it were on the treadmill or a 20 min video. Nope. Didn't happen. A cold front came through and by 9:30 this morning it was really just right to go run. Did I do it? Nope. Even though my legs were begging to be stretched out.

Ok, well, I finally listened to my legs opted to put out the treadmill and did the 20 min 6 mph program - just enough to watch episode one of season one of Duck Dynasty (22 min). Perfecto. As for the actual program, I decided not to do anything with the incline and just see how it went. I decided I'd rather focus on the speed aspect of it than mimicking the outdoors. The program has you walk for 3 min at 2.0 mph and then jumps to 3.0 for another 6-8 min or so and then jumps up .5 mph ever minute until you reach 6.0 then drops to 3.0 to cool down. In the past I start jogging at 4.0. I tried this time. I couldn't do it. It was too slow, so I walked it!! Wow, I never thought that would happen. I remember eons ago when 4.0 was too fast! Man how far I have come! I did end up cutting out on the 6.0 before the time was up and took it down to 5.5 for the last 30 seconds or so, but overall I am pleased with how it went. It was a nice fairly easy jaunt that got my heart rate up and has allowed me to not be a total exercise bum today :)

I didn't run with my buddy today so I don't have the cool table. I ran around my neighborhood and checked against my last session's maps and it wasn't until week 6 that I accomplished what I did today. woot! woot! I went 2.23 mi total and maintaining the pace that I did last week when I didn't go as far. yeehaw!!

I could tell that I am running at a faster pace than I did the first go round. However, I think the walking path we are using when I run with my buddy is too easy. It is pretty much all flat surfaced where my neighborhood has a variety of inclines making the run more challenging and building better muscles. So today's run definitely felt challenging due to the inclines, but I did it rather well I think :)

Matthew has 3 weeks until his PT test. I was surprised/impressed when he verified the program I have been doing and told me he'd been looking for something like this to help him prepare for his great nemesis - the 2 mi run. He figures he could pick up at week 4 and be just fine b/c he is not a beginning runner. I think it is pretty cool that we'd be on the same week. Though his pace is so much faster than mine that even if we could run at the same time, we wouldn't be running together.

I have been curious about my weight b/c I haven't been able to weigh myself the last couple of weeks. The scale decided it didn't want work, even with a change of batteries, and neither do the Wii remotes, again, even with a change of batteries. I think I am losing inches but I am afraid to tape myself b/c the last time I did, there wasn't improvement. My jeans are certainly fitting better though which is nice.

Haters

Someone posted on Facebook the most recent link on the Matt Walsh blog called: An inspirational message to the Haters of America and read it. I have enjoyed a lot of his posts, besides being intrigued by the picture linked with the article. It is a picture of a toned Maria Kang posing with her three children ages 3 and under with the caption, "What's Your excuse?" Read both their articles. Man, it brought back memories from my weigh loss journey. I just spent probably an hour (yep, not really good use my of time) searching through my blog for my posts where I talk about some of the negative feedback I received regarding my weight loss and how it affected me:

From June 2010 when I finally reached my weight loss goal (150 lbs):

"I mentioned to someone that I had a hard time finding something to wear this morning because my clothes are too big, and the response was sarcasm about having such a problem. I have come to realize that there comes a point where people stop rooting for you quite so much and feel more jealousy instead. I feel uncomfortable sharing excitement or milestones about my weight loss efforts (outside of my blog which was purposed for this journey) because I don't want to draw too much attention to it. When I had my big weight loss effort a few years ago, it seemed like all the ladies in the ward were on the same kick and it was a group effort. There was one person who began the trend and was like a beacon to us. If she can do it - and she looks great - we can too. I am grateful for her example and contagious enthusiasm. As someone who looked up to her for her accomplishments, I didn't really pay attention to anything other than her inspiration."

The same day I wrote that post, I also wrote this in my journal:

"Alright, I admit it. Today I am not ok with having lost a baby. In December I thought the new body coming would be a baby, not a new one for me. Don't get me wrong, I am grateful that I've been able to accomplish such an amazing feat - and it really is. I am so proud of myself for reaching my weight loss goal. But as the time draws near for when I'd be delivering, I feel a remorse. Whenever **** comments about my weight loss, this trade-off is always my first thought."

Six months later I wrote this post when I'd started to gain it back (155 lbs):

"It still throws me off when I hear people - strangers, or people not in my closer circle of friends - call me or refer to me as thin or skinny. One night with one such reference, in jest a person said, 'You're thin so that means we don't like you.' I realized how awful the prejudice is that overweight people can have against thinner people. I have felt those same feelings of jealousy and intimidation that can come from being around thinner people, but I realized they are unfair. Thin people are people with feelings too. It was a little bit shocking and hurt my feelings to be told that someone wouldn't like me because of my stature. 

Now that I'm writing this, I can't remember the specifics of another chink to my motivation. I know it has to do with jokes/comments that are made regarding my weight loss from people closer to me. The end result is that I feel like I have to eat more to feel accepted. 

I am a people pleaser. I want others to be happy, so I will do what it takes to make sure that happens - even at my own expense (or even my family's). Helping ensure the happiness of others is not a bad thing. However, I think in this case I need to not worry so much about what others think and just be happy myself. This is a very hard thing for me to do."

Here's a couple of quotes from Matt Walsh's article that I want to shout out:

"And this is where I must stop you, Haters. Be as thin-skinned, jealous, and spiteful as you like, but you have no right to take someone else’s successes away from them. You have no right to invalidate their achievements. You have no place. You have no standing. You have not the single, slightest damned clue as to what you’re babbling about. She had it easier than you? What genie from what bottle gave you the power to peer inside a stranger’s conscience and confirm that wild speculation? Are you sure she didn’t just work harder? Why have you ruled that possibility out entirely?

Success ...  can’t be accomplished passively. These are the fruits of labor that you don’t see, and maybe can’t even fathom. You aren’t inside their minds to hear that voice telling them to give up, to give in, to stop trying. You can’t hear them fight with that voice every minute of the day.
Nothing is easy, Haters. Everything is earned. They have it because they earned it. You don’t because you didn’t. Deal with it.
So here’s the good news: you don’t have to be like this. I’m not saying you should be a bodybuilder, or a millionaire, or anything else; I’m just saying you don’t have to hate success. You don’t have to feel attacked or insulted just because your neighbor is finding happiness and fulfillment in his chosen pursuits. Slackin'. Kind of.

I had every intention of running yesterday despite having to be at the school at 9:15 for a field trip. What happened instead was a MUCH needed power nap. I had stayed up til 2 the night before due to the tax extension deadline and helping Matthew get his paperwork done for his work - procrastination on both our parts. I got the boys out the door, laid down for 45 minutes then left for the day. We visited a farm and by the time we were on the bus back to the school at 1:30, I was pooped. I even fell asleep on the bus like some of the other 1st graders. Unfortunately it was a long night with late meetings as well. So, I skipped the run. 

This morning I had the option of doing my video, running, or napping. Once again I chose a nap. Aaron was up and down all night and it was exhausting on top of the little sleep the night before. I slept for a good 2 1/2 hours and could have kept going, but opted to accomplish something today besides catch up on sleep. I was surprised once I got moving how much better I felt. I think it was worth the trade-off. I may still end up doing a video. Now that I feel more alive, my legs are telling me to go run.

 This info is based on my buddy's stats otherwise it would show slightly different times/pace in the 3 min intervals. We have been able to keep pace with each other pretty well, but I was shocked at how fast I was able to go in the 3 minutes. In fact, I dusted her on the first 3 minutes. It felt so good to run! At first I wondered if our programs were different again, but nope.

 The second 3 minutes I ran slower, but in the last minute I felt the energy build and released it to the finish line (thereby pulling away from my running buddy). Granted, she is pushing a jogging stroller with a 1 yr old so this isn't an easy task on top of the extra effort she has to expend.

 She has never gotten this far in her training so it is new to her. I remember how hard that 3 minute interval was for me. The fact it was easy and fast is amazing. I am so grateful for how far I've come!!

Couch to 5k2 Week 2

I know I haven't been good about updates this last week, but I have been faithful in my exercising. In fact, Wed's run was amazing! I only ran with my buddy on Monday so around the neighborhood I went the other two days. I think I hit 6 mph intervals - certainly on the last run. Friday I was slow and sluggish but I did it.

Tues I was pressed for time, and I remembered I had a video link in my email for a 20 min cardio blast. I decided to give it a try. I ended up being so muscle sore in my arms and back that I decided to do it again on Thurs. Wow what a workout!! And right in my trouble spots - the triceps. The only complaint I have is that my left knee ends up hurting. I don't feel like there is enough time to get my form good b/c you have to move quickly - thus the cardio blast. So I don't know how wise it is to continue doing it, but I like it.

I was noticing this week that I am looking a little more toned in my stomach. I need to keep my eating in check though or I will end up at an impasse. I have made the mistake of making a lot of desserts lately. Desserts aren't necessarily bad, but I have a hard time staying out of them and it gets me in the habit of eating sweets and feeds that craving.

Kale Tart

Ended up making this for dinner tonight. She calls it a tart, but I call it a quiche though it didn't thicken up like one. The recipe calls for yogurt and I didn't quite have the 1/3 c. so I added a little bit of buttermilk to top it off to the correct measurement. I don't know if that made a difference in how well it set. I wondered if the eggs were actually done, but the dish was pretty hot when it came out of the oven so I think it just ended up being runny.

The recipe says any greens can work, so I did a bunch of kale and some spinach to even the taste and texture out. I decided to throw in some butternut squash too. If I had bacon I would have added it too. In fact, one of the boys even suggested that would have made a good addition to the dish. The flavor was amazing. I could have eaten more than my share.

The only draw back was that I didn't break the greens into small enough pieces. I just ripped the leaves into big chunks thinking it would wilt down as I cooked it. Unfortunately it did not work out in my favor and that was the worst part of the whole dish. It was amazingly delicious though and  well worth doing :)

Almond Milk & Kale

After a year of planning on it, I have finally used my almonds to make almond milk. It was pretty easy. The basic gist is you soak your almonds then blend them with milk, strain out the crumbs, and voila! The almond crumbs were then dehydrated and put in the freezer to be used for almond meal later. So, here is the result:

Many of the recipes I looked at suggested adding a date to sweeten it and vanilla to flavor it. I did neither because I didn't actually taste it until this morning. The boys had it with their cereal for breakfast. Both thought it was interesting. Aaron seemed the most enthusiastic, and Jared didn't care for it. At that point I decided to try adding vanilla to it. Aaron thought it was even better and raved at how good it was. Jared appreciated the change and felt it helped. I suggested they have the frosted shredded wheat with it so the sugar would dissolve and sweeten it. Aaron ended up finishing his cereal but giving up the remaining milk, and Jared had me finish off both. I really appreciate their willingness to at least try all these experiments I undertake :)

As for me, it was different but I didn't dislike it. It wouldn't be hard to get used to. I may experiment with it some more to see what kind of flavors to add to it. I haven't tried it in a smoothie yet so I don't know how it would taste that way. The coconut milk I have been using doesn't add a lot of flavor change, but I have noticed it isn't quite as creamy tasting.

Yesterday Whole Foods had a 4 hour sale on kale - 5 for $5. Kale goes for $2/bunch at regular stores and this organic stuff sells for a lot more than that. Either way $1 a bunch was a great bargain so I had to get my hands on it. Five bunches is a LOT of kale though. So, I've spent my morning processing it. I've made kale chips (already eaten most of them), frozen two bunches, and will use the remaining two for recipes. These are the ones I'm planning for:

Enchilada Casserole with Kale and Sweet Potatoes (will probably use the butternut squash in my freezer for it)
Kale Tart (basically a quiche)
Zuppa Tuscano (from FB)

The only reason these aren't already in the works is b/c it isn't dinner time! Maybe I should make them anyway and freeze for later.... hmm

Oh, and my next experiment will be coconut and peanut butters.

C25K2 W1 D2/Summer Challenge Final Weigh-in

Today was harder due to a lack of sleep last night. On Monday as I was running with my new partner, I realized that the chubby jones podcast is short two running intervals :( She quits at 6 while the other c25k apps do 8 making a 5 minute difference in the overall program. I verified it today by simultaneously playing her podcast and a c25k app that would notify me at the interval changes. Unfortunately they weren't synchronized so she saying to run or walk while I was still doing the opposite, but I finished at exactly the startup of the next week's run (as in, the warm up for the next podcast finished as I finished the cool down). One of the things I LOVE about her podcast is her pep talks and countdowns. The app just gives an indication of when to change so I don't have the mental prep to know to when to slow down or speed up. I will have to tweak to see if I can get the programs to sync. The podcast plays as a music file so I might be able to go in and pause it or restart it while the app is playing. The advantage to this knowledge is that I think overall my performance will improve. I'll be prepared from the beginning to go the distance. 

Friday I will be running on my own due to an early appointment. I look forward to running the neighborhood and comparing my progress on familiar ground :)

Yesterday was the final check-in for the summer challenge. I am finally headed in the right direction. I had kind of plateaued but broke the 180 barrier. *whew* Hopefully I can keep it up. The funny thing is that yesterday I even felt smaller, though I don't think it really is noticeable.

I am toying with the raw food idea again - at least more of a whole foods approach/more greens and different milk products (nondairy). I have coconut chunks in the fridge that I'd planned on making milk out of, but then was reminded about coconut butter and am debating which I want to do. In the meantime, I opened a can of coconut milk to use in my smoothies instead of regular milk and have almonds soaking to make almond milk. I miss the rich taste of the regular milk but it works. I don't know if it will be any more economical, but I like feeling self sufficient in that regard. 

Monday I felt so good after my run and decided to do a smoothie for lunch instead of my usual sandwich or leftovers. By the time Matthew walked through the door I was an emotional wreck. I'd had a rough afternoon with Jared and his homework and finally lost it when I put dinner on the table and Aaron complained that he didn't like any of the food. I had to put myself in time out. I think the smoothie for lunch was not enough to sustain me, and as a consequence, I was out of control. (Maybe that's why I dropped a couple pounds for my weigh in too ;))

Yesterday I had my usual smoothie in the morning then went to my scripture class. I had planned on running errands afterwards, but thought to call a sister who lives near the church to offer to help her with her kids. She has a new baby and two young ones at home. She took me up on the offer as her husband is out of town and only got two hours of sleep the night before. I needed to eat lunch before I tackled the task of entertaining the kids and fast food really didn't sound appealing. I had to do an errand at a grocery store so I browsed their deli/market section and felt like everything was over priced so ended up with fast and easy food: an orange and greek yogurt with granola. It did a decent job of holding me over the two hours I had with the kiddos before getting home and eating a snack. I was really craving the crunch of tortilla chips so I had some chips with eggplant salsa (yummy). I probably ended up over eating at dinner (coconut shrimp, wild rice w/ cranberries, and wax beans).

I have been thinking about going back to being truly accountable for what I stick in my mouth, but I've realized I spend more time thinking about food when I do. I am always in the kitchen trying to figure out what I am going to eat whereas now, for the most part, I eat and move on. For now I am working on adding variety to my diet.

Starting Over C25K2 day 1

I decided to start the program over and work on speed. Apparently my journey has been an inspiration and several of my friends have decided to start the program as well. One of them is a sister who lives up the street from me, so I pressured her into running with me. We met at her house this morning and took to a trail around her neighborhood. Apparently she had facebooked me this morning to cancel but I didn't get the message. In the end she was glad b/c it turned out to be great weather for running. She has a little girl who turns one next month so she feels protective about being out in the weather (reasonably so).

I listened to my chubby jones podcast and she listened to pandora with a c25k program that tells her when to stop and go. We were about 5 seconds off of each other, which was fine, but then my program ended and she still had 2 intervals to go. I am not sure why the discrepancy, but I ran with it anyway. ha ha :)

I was able to keep a pretty good clip. I tried to measure the distance but couldn't find the trail on the satellite map. She said it was about .90 m each direction. I am curious how fast my pace was. I expect it was at least 4.5 mph, maybe even up to 5.0 mph.  I hope that I can maintain a faster pace as the running intervals lengthen.

I woke up this morning feeling a bit ill. We had stuffed peppers for dinner last night along with jalepeno poppers. Apparently my body didn't appreciate all those peppers.I made my green smoothie for breakfast and hoped that I wouldn't have backlash when it was all said and done. I think it helped settle my stomach though b/c I didn't feel too bad afterwards.

We had an assignment to help clean the church, and though it was my intention to pick up my bib and shirt then go clean, we left late enough that I got dropped off while Matthew and the boys went to the church. I was the first one from the LDS team to be there so I got the box of shirts and bibs to open and distribute. Simple enough :) 

The time went pretty quickly before it was time to line up and start. There was a fun run (1 mi) that started at 8:30 and then the 5K began at 9:30. There were so many people and so much noise that I think they played the national anthem then started the race. I couldn't tell. It was a bit of a surprise when all of a sudden every started going. I was not prepared. I was kind of towards the front (where all the runners are) so I had to run to not get run over!! As the crowd thinned out, there were some walkers that decided to go on the grass and let the runners pace. I thought that was a brilliant idea and joined them so I could start up my podcast. I decided to start with the week 7 and then let it move on to week 9 when it was over. I love the music in it and figured it would be motivating. Timing worked out well in the end. It was a good decision.

There were water stations at .85 and 1.85 mile points and time keepers stationed at each mile marker. At the end of mile 1 my time was 13.26 - not bad :) I was surprised to see people on their way back right before I'd even made it to the first mile.  Turns out there were 3 people who finished the race in the 17 min bracket! Holy cow they are fast!!! Once I finished my 5 min warmup, I felt like I had a pretty fast pace but was surprised at how much my inner thighs were sore. I am sure it is from the workout videos. 

Week 7's podcast was for a 25 minute run. By the time I reached mile 2 I was feeling more tired and slowed down a bit. My time was 26:30 or something like that so I knew I'd done the last mile in about the same amount of time as the first one. I was able to tell myself that I can run for 13 more minutes. No big deal. I was still debating in my mind how I wanted to handle the last mile. I thought about walking for 5 minutes and then finishing off the race, but decided to try and get to the end. It was a little weird walking through the cool down and warm-up, but the music was still fun enough that it wasn't really hard to do.

As I approached the final turns that would take me around to the finish line, I decided to walk just a bit. It was no more than 30 seconds but it was probably like 10 sec. Enough to get a drink and get going again. It was warming to see people clapping and cheering for us as we passed, encouraging us to keep going. When one person mentioned I still had .25 miles, I decided to walk a little bit more so I could run to the finish line. It may have been a minute or so, but it wasn't very long. Matthew was supposed to meet me at the finish line, and though I scanned the small crowd I couldn't see them. As I made the final bend for the last stretch to the finish line, I 'punched' it and sped to the line. I could see the official clock and wanted to make it before 41:40. I crossed what I thought was the line just soon after it turned. I was surprised when I saw my final official result was 41:39:77. Guess I made my goal after all :D

My legs didn't feel like they would collapse under me when I stopped which was nice. I started walking around the parking lot when Aaron and Jared ran up behind me shouting "Mommy!" They'd been at the finish line after all :) I had told Matthew that I expected to do it in 45 minutes, but he thought I'd come in closer to 40 so he'd been there waiting. It made me feel good that he had that kind of confidence in me :)

 Overall I feel pretty proud of myself. I have come so far. I am really grateful for my friend JG for starting me on this path. If she hadn't bought me those running shoes I would have quit a long time ago. And I am thankful for Jared & Aaron running/scootering/biking the neighborhood with me all summer so I could continue training. In fact, today they expressed some disappointment that they could not be with me. And I am thankful for Matthew supporting me in participating today. I feel very blessed.

9 weeks/26 runs down, 1 to Go!

Tomorrow is the big day. I feel so nervous, but I find that an odd feeling b/c it isn't like I am really competing. I guess I am competing with myself and the image I have of me crossing the finish line. It is funny b/c I had no problem feeling like I could do this when I thought that I'd make it with the 5 min warm-up and cool down, but once I thought that I wanted to actually run across the finish line I had issues.

I didn't really get a chance to play with the phone to set up my tunes, but I did move week 7 to play before week 9 since it has my favorite play list. I am still deciding how I am going to handle that. I was looking at the route and it is 3.15 mi and all flat. When I've run through the neighborhood there are some inclines, so I am hoping that a level field will make it more likely for me to run further.

Yesterday I did the Self video again and today I'd planned on biking but spent the day on my feet in the kitchen. I'd hoped to go to bed early, but it is even later than usual. Well, late as usual. Last night I was in bed and asleep by 9:45. Pretty awesome :D

Easy Baked Eggplant Parmesan

Easy Baked Eggplant Parmesan

Ingredients: 

  • 1 large eggplant, sliced lengthwise into 1/2-inch-thick pieces (about eight)
  • 2 eggs, beaten with a fork
  • 1 1/2 cup panko bread crumbs (sundried tomato or plain)
  • 2 tablespoons extra-virgin olive oil*
  • 1 (25 ounce) jar pasta sauce (roasted vegetable or any variety)*
  • 1 cup shredded mozzarella cheese*
  • 1/2 cup shredded parmesan cheese

  • Method: 

    Preheat oven with a baking sheet inside to 375°F. Coat eggplant slices with beaten egg, then bread with panko crumbs. Spread oil on hot baking sheet and place eggplant slices on it in a single layer. Bake 15 minutes, flip and bake another 10 minutes.

    Increase oven temperature to 475°F. In an 8 x 10-inch ovenproof dish, layer pasta sauce, then eggplant, and top with cheeses. Repeat, finishing with cheese. Bake until the cheese melts and turns golden in spots, about 15 minutes.

    I have discovered that I love the taste of eggplant and with the abundance of eggplant I've been getting from our crop share this summer, I have been experimenting with it quite a bit. Now that I know the secret to good eggplant dishes is to salt and drain them first, every dish has been delish. This one, however, had oohs and ahhs from everyone :)  
    I liked the simplicity of the dish. I did not dip the eggplant in egg and dredge it through the crumbs then roast it in hot oil. Instead I sprayed the with cooking spray, sprinkled bread crumbs on top and put them on a cold baking sheet and roasted them in the oven (but cooking and flipping according to the directions). I did at least remember to coat the baking sheet with cooking spray as well. Too many times I've forgotten that step and had vegetables stick :/
    I will definitely be making this again!
